Morning bake
The oven is lit at 4:45. By 6 AM the croissants are laminated and resting. By 9 they're on the shelf — and they stay there until they're gone.
We do not freeze. We do not hold yesterday's batch. If it didn't bake today, it's not for sale.

A morning in the bakery
Three windows, three ovens — and everything that goes out the door is made today.
Step 01Oven lit · 4:45 AM
The deck oven pre-heats for an hour. Doughs — laminated, rested, shaped — come out of the retarder at 5.
Step 02Bake · 5:30 AM
Croissants, puffs and breads bake in waves. Cakes cool on racks. Everything is timed to the counter opening at 10.
Step 03Counter · 10 AM
The cabinet is full. By evening it is not. What remains at close goes home with the staff; nothing carries over.
